Banana Protein Muffins

If you love chocolate chip muffins for breakfast, then you have to try these banana protein muffins!! Not only are they high in protein and low in fat, they are also really DELICIOUS!!!

These tend to disappear pretty quickly in our house, so thankfully they are easy to make! They also make the perfect breakfast for busy on the go mornings ~ and also great to take if you are traveling!

You’ll need:

  • 3 ripe bananas

  • 1 egg

  • 3 tbsp maple syrup

  • 1 tsp vanilla

  • 1 cup Kodiak Cakes

  • 1 scoop of your favorite vanilla protein powder (I use PEScience)

  • a pinch of salt

  • 1/3 cup chocolate chips

Mash your bananas until they have a smooth consistency. Then add in your wet ingredients: egg, maple syrup and vanilla. Stir together.

Next, stir in the Kodiak Cakes, protein powder and salt. Once you’ve completely mixed in the dry ingredients, gently fold in the chocolate chips.

Add the mixture to a greased muffin pan. And top each off with a few extra chocolate chips!

*I like to use a silicone muffin pan for this. It makes it easier to get the muffins out, and you don’t have to use the paper liners!

Bake at 350°F for about 18 minutes. Let them cool and E N J O Y !!
