Easy Weeknight One Pan Meal
If you are like me, meals during the weekdays are sometimes thrown together at the last minute, or we end up getting takeout. I am not a huge meal-prepper, but I do like to always have vegetables and meat on hand – which makes it easy for me throughout the week to throw meals together!
I love quick and easy meals for days that we have a lot going on or I just don’t feel like cooking an extravagant meal - although none of my meals are very extravagant!
I never get tired of this one pan meal because not only is it E A S Y, but it is also {and to some probably surprisingly} very D E L I C I O U S !
I prefer to make this meal with chicken sausage, but you could just as easily use pork sausage. Also, I have tried many different chicken sausage brands and flavors. My personal favorite is Sam’s Choice, Chicken Apple Sausage. This one is our top choice.
You can also use any variety of vegetables. If you don’t like bell peppers, add brussels sprouts! Or just use whatever veggies you have on hand.
Here’s what you need:
10-12 cherry tomatoes
2 tbsp olive oil
2 tsp onion powder
2 tsp garlic powder
Salt & pepper
1 package of chicken sausage
1 red onion
6 cloves of garlic
1 bell pepper
3-4 whole carrots
1 bunch of broccoli
Preheat your oven to 400°F.
Start by chopping up all of your veggies. You can cut them whichever way you prefer – however, the carrots will take the longest to cook. I cut them in about ½” to 1” chunks to be sure they actually get soft and cooked. Place all of your cut veggies in a bowl and drizzle with olive oil. Add onion powder, garlic powder, salt & pepper and toss together.
Then cut the chicken sausage into chunks and add to your vegetable mixture.
Line a large baking sheet with parchment paper. Empty your bowl with the chicken sausage and vegetables onto the pan and spread out evenly. Place in the oven and cook for 30-35 minutes. Note: The vegetables will begin crisping before the 30 minutes; the char it will create makes them extra tasty!!
Enjoy with a nice glass of wine because dinner prep only took 5 minutes with an easy cleanup!
